Baking time~!

Flipped through my recipe books that i've collected throughout the years & im missing the days in JSS FnN lessons where there's only 11 of us, having fun cooking, baking, washing and spiking our teachers - Mrs Ong and Julianah Huang. Lol..

Saw this recipe through the net recently.. "Baking" cookies without using an oven. Cool~! Hassle-free! Shall try it one of these days when im free at home. Kekeke.. If my cooking skills is still up to the standard, might "bake" one of these cookies for him. Hohoho..

Kay's No-Bake Cereal Cookies
2 packages (11.5 ounces each) butterscotch or chocolate chips
½ cup creamy peanut butter
5 cups Wheaties (or cornflakes)

In double boiler or microwave melt chips and peanut butter. Pour cereal into a large bowl then pour melted mixture over cereal. Gently mix to coat, being careful not to crush the cereal. Drop heaping teaspoons of the mixture onto wax-paper-lined cookie sheets and let harden. Makes about 3 dozen.

Janet's Chocolate Crisps
16 ounces chocolate chips (one 12-ounce bag plus two-thirds of a 6-ounce bag)
2 teaspoons butter
5 cups cornflakes
½ to 1 cup finely chopped unsalted peanuts (optional)

Melt chocolate in double boiler or in microwave oven. Add butter and stir until melted.
Transfer chocolate to a large bowl. Add cereal and nuts if using and gently stir until well coated. Drop by heaping teaspoonfuls onto wax paper, then let harden. Makes 3 to 4 dozen.

Note: You can use half chocolate and half butterscotch chips in this recipe instead of just the chocolate.
